Caprese Salad


The colours of a caprese salad (caprese insalata, literally salad of Capri) represent the colours of the Italian flag. Its quick, easy and incredibly flavoursome; even the most technically challenged will appear a culinary master.


Buffalo Ridge Mozzarella (using anything other than buffalo mozzarella will invoke the wrath of the taste police)

Fresh sweet basil

Ripe tomatoes (sliced or cherry tomatoes)

Extra virgin olive oil

Coarse salt and pepper


To do a more traditional Italian-inspired caprese salad, alternate slices of buffalo mozzarella and tomato. Place a few basil leaves on top, sprinkle with extra virgin olive oil and add salt and pepper to taste.

Alternatively, for a more modern take, tear the buffalo mozzarella and toss with either slices of tomato or cherry tomatoes. Tear the basil and sprinkle on top. Sprinkle extra virgin olive oil over the whole and add salt and pepper to taste.

You may wish to add a dash of balsamic vinegar, but purists may mutter.
